This month’s Cheesecake of the Month is a luscious celebration of summer: Peach Melba Cheesecake.
Inspired by the classic dessert created in the 1890s for opera singer Nellie Melba, “Peach Melba” traditionally pairs ripe peaches with raspberry sauce and vanilla ice cream. Our version transforms that timeless flavour combination into an indulgent New York-style cheesecake. It starts with a buttery graham cracker crust, filled with a smooth, creamy base made with local Niagara peaches at their peak.
On the side, we serve a vibrant raspberry compote infused with Dillon’s Distillers Peach Liqueur, which perfectly complements the fruit. It’s a dreamy, elegant slice of peach season you won’t want to miss.
